Un coin de pays - La Quebecoise in La Paz

Ha oui! Pas de la faite maison, à part ça. De la de restaurant. C'est sur le menu, listé comme Comida rapida tipica Canadiense au restaurant La Québécoise, tenu par une Québécoise.

Le restaurant est situé dans les quartiers chics de La Paz. On le voyait affiché sur les pancartes touristiques et on l'a cherché plus d'une fois, sans succès. Aujourd'hui, par hasard, on est tombéEs dessus en se rendant à El Arte al Aire Libre. Nous sommes entréEs sans grand espoir puisqu'il s'agit d'un restaurant de fine cuisine, un peu nez en l'air.

EUREKA! La poutine était au menu, à côté des salades au saumon fumé et autres repas raffinés. Elle coûtait 48 Bs (elle aurait coûté 48$ que je l'aurait commandée quand même) et elle était bonne! Fromage Bolivien et sauce atypique (plus aromatisée que celle qu'on connaît), elle a tout à fait fait mon bonheur culinaire. Je l'ai bien dégustée, convaincue que je n'en retrouverai pas d'ici mon retour. Mais sait-on jamais. Je n'aurais pas cru en trouver en Bolivie non plus...

There is a squeaky cheese in La Paz, I know because I have tasted it in my yuca and queso relleno. The fries of La Paz, which I eat in my salchipapas, tend to be a thicker cut and a little on the dry side.

So when we went to La Quebecoise in La Paz to eat a poutine, I knew what I was getting myself into.

But, naturally, I was wrong. Instead of the squeaky cheese, it was little chunks of a cheese with a bit more flavour, orange in colour, and a texture similar to older cheddar. The fries were thinnish, with a little bit of crispiness, but soft on the inside. And the sauce was brown, as always, but with a mix of herbs, creating a complexity that I've never tasted in a poutine before.

The restaurant bills itself as fine cuisine, and I laughed at the idea of Québécoise fine cuisine, but this truly was a fine cuisine poutine.
